Diet Food: Lentil Soup with Broiled Tomato Sandwich

Today’s lunch was a variation on theme. The diet book called for lunch to consist of a bowl of lentil soup, a small tomato and cheese sandwich,  and then the remaining tomato by itself. Well the lentil soup isn’t so bad of an idea – but the thought of eating “one piece of bread topped with a few slices of cold tomato and reduced fat cheese” just did NOT sound appealing to me. 

So I fancied it up!

I bought the Progresso Lentil Soup and heated up 1 cup of it. I toasted my “one piece of bread” (which by the way was whole grain, whole wheat), and sliced up a whole roma tomato. I turned the oven on to “Broil” and sprayed a small cookie sheet with olive oil cooking spray (zero calories). I laid the tomato slices on the cookie sheet, sprinkled them with salt, pepper and italian herb seasonings, and broiled in the oven for a few minutes. When the tomatoes were finished, I topped the already toasted bread with 1/2 of the broiled tomatoes and 1 T parmesan cheese and returned to the broiler. I added the left-over tomatoes to the lentil soup. In just another minute the parmesan cheese was toasted and the “sandwich” was ready! Because I like lots of strange flavors, I added 1 Tsp of Louisiana Sauce to the Lentil Soup and stirred. And Viola! Lunch was ready within a few minutes. 

Total calories, fiber and protein (in that order) is: 290 calories. 

Oh I guess I should have taken a photo for you…sorry… I ate it too fast to think that far ahead!

I am also allowed 1 afternoon snack and 1 after-dinner treat, but I only eat them if I need something to tide me over.

    Wow…that sounds really good! I’m going to try it … I actually love lentil soup and tomatoes are a given! thanks for sharing and … for listing the calorie count! LOL!
